25 | Licensing Program Analyst (LPA) Warren Birks conducted an unannounced Case Management Incident inspection. This inspection is regarding an Norovirus outbreak incident that took place April 26, 2022. Licensing Program Analyst met with Assistant Site Supervisor Amber Pimentel who providing information and assistance for the inspection. The purpose of the inspection is to observe the kitchen and the facility's food service operations.
During the course of the inspection, LPA observed the kitchen, food storage, and transportation operations of the facility. LPA also interviewed three (3) kitchen staff and one (1) food delivery driver.
LPA observed the food preparation area, food storage area and kitchen area appear to be clean and sanitized. All food prep staff were observed washing hands, using gloves and wearing mask throughout the day. LPA observed that food is stored primarily in large walk-in refrigerators and a large pantry room. The food is kept in their original containers and/or sealed using plastic to protect contamination (contaminated food is discarded).
Based on interviews, food service staff wash their hands multiple times throughout the day. Staff also wear gloves and mask continuously throughout the day. Kitchen staff also indicate that the kitchen is cleaned and disinfected everyday (using a solution containing bleach mixed with water). Staff also indicated they are the only staff using the kitchen facilities and it is very rare for other staff to enter the kitchen area (thus lowering the risk of food contamination at this time).
LPA also observed a portion of the food delivery service operations. LPA observed staff #4 place a wheeled cart outside the kitchen. Kitchen staff then place enclosed food storage containers on the cart. The containers are then filled with food to be transported. The containers are used to keep food warm and are cleaned prior to each delivery. Continued |
